March 15, 2002 – All persons working in areas of food and beverage handling and sales during the Carnival season are required to apply to the V.I. Health Department, Environmental Health Division, for health cards and health permits, said Commissioner of Health Dr. Mavis L. Matthew.
This applies to all Carnival booths, street vendors, Food Fair vendors, horse racing vendors, boat race vendors, "Roas'-A-Time" (J'ouvert) vendors, and all who sell in the Lionel Roberts Ballpark, Fort Christian parking lot, or any other location, according to a release from the Office of the Governor.
Individuals selling food or beverages must obtain a health card. Businesses where food and beverages are sold are required to have a health permit.
Booth operators are reminded that they must provide adequate water for handwashing. A hand sanitizer can also be used. Food handlers should wear clear plastic gloves and appropriate hairnets or hats to cover the hair. A different person than food servers should handle the exchange and collection of money.
